Raw ‘Cookie Dough’ Bites

Superfood Cookie Dough Bites


I posted a recipe for Chocolate Matcha Doughnuts a while back (you can find it here) and I realized I couldn’t stop eating the dough while making them. So I tweaked it a tad and ta-da! now you have egg, dairy, & gluten free raw cookie dough bites. These are perfect for pre/post workout, kids, on-the-go, or a little after dinner treat. Oh, and they’re full of superfoods too- fiber from flax & oats, antioxidants from Matcha & cacao powder, natural sugars from honey & applesauce, and protein from peanut butter. Enjoy!


What you’ll need:

-1 cup gluten free oat flour (I use organic rolled oats- throw in the mixer for about 30 seconds and you’ve got ‘flour’)

-1/4 cup ground, organic flax seeds

-2 Tbsp organic cacao powder

-1 tsp organic matcha powder

-1 Tbsp organic peanut butter (can sub almond butter or omit, but it makes them a little doughier)

-2 Tbsp unsweetened apple sauce

-4-6 Tbsp unsweetened vanilla almond milk (depending on how wet/doughy you want them)

-1 Tbsp local honey (can omit for less sweet or add more if desired)

-2 Tbsp EnjoyLife dark chocolate chips

What you’ll need to do:

  1. Combine all ingredients, except chocolate chips, in a stand mixer.
  2. Mix until well combined, making sure to scrap the sides of the bowl as you go.
  3. Stir in chocolate chips.
  4. Scoop 1 Tbsp of dough on to parchment paper.
  5. Allow to chill in the fridge or freezer.

Yields: 8-10 bites

You can probably store these in the fridge for 5-7 days (if they last that long 😉 ). They will last even longer in the freezer.
